Only 3 ingredients, two of which you can pick up on your grocery run: apple juice, honey, and ale yeast. (If you're brave, you could try using bread yeast and see what happens. :-) ) It ended up around 7.5% abv, with a dry tartness.  I think it turned out pretty well, but since I was aiming for something a little sweeter, I'll add more honey the next time.

Scott, couldn't you sulfide this and back sweeten it? I would like to try this, maybe go with 15 lbs of apple juice and lb of honey, and then back sweeten with the rest after the sulfide process? Maybe hit it with a little acid for balance?  Great summer idea!!  Grin Thanks!
